Cut off from organized tourism circuits, <em><strong>Speightstown<\/strong><\/em> has fallen into a deep recession and several small businesses have had to close; the risk is that the historic town will gradually depopulate. And to say that we like it so much the way it is. The choice falls on <em>chicken with cou-cou<\/em> and <em>fried plantains<\/em> but first and foremost <strong><em>fishcakes<\/em><\/strong>, the Barbadian version of the crispy salt cod puffs that in the <em>French Antilles<\/em> and <em>Trinidad<\/em> they call <strong><em>accra<\/em><\/strong>, in <em>Jamaica <strong>stamp&#8217;n go<\/strong><\/em>, in <em>Puerto Rico<\/em> and Santo Domingo <em><strong>bacalaitos<\/strong><\/em>. It is the Caribbean appetizer, to accompany the aperitif.
